When I was pregnant, I asked my doctor what the healthiest fast food restaurants were. I kind of laugh now thinking back to that and what an oxymoron healthy fast food sounds like. But I was pleasantly surprised when she said that Taco Time, depending on what you order, can be a good option if you have to eat fast food. {Ok, how often do we have to versus want to eat fast food?} Regardless, that endorsement began a long-term love affair with Taco Time that continues to this day. So when a friend shared a recipe to make copycat Taco Time beef, I was in! It is so easy and delicious, I have to share it with you.
Ingredients:
1 lb lean ground beef (I always buy grass fed)
1 Tbsp minced onion
1 ½ tsp instant beef bouillon
1 tsp chili powder
¼ tsp salt
1/8 tsp minced garlic (I used the jarred already minced and ready)
½ tsp ground cumin
Optional- Cheese, tortillas, lettuce, sour cream
Directions:
Cook beef (I use a bit of spray olive oil in the pan)
Add all ingredients in a small dish and mix
Add ingredients to the cooked beef and stir it all in
Serve on top of lettuce as a taco salad or in a tortilla for a burrito
