You probably know by now that I’m a dessert person. But, I have to watch my sugar intake (which is really annoying).
I recently craved some cookies, but all the yummy-looking pictures of desserts I found on Pinterest contained tons of sugar. So, I did a search for low sugar desserts and most of them called for chemical sweeteners. I almost gave up when I came upon the most delicious looking Chocolate – Peanut Butter – Granola Cups. Oh, my goodness, yum! They looked gooey and decadent, but without a lot of added sugar.
I have revamped the original recipe (found on omgchocolatedesserts.com). Here is my version:
No Bake Low Sugar Peanut Butter Granola Cups
Granola cups:
- 2 ½ cups granola (or an 11 ounce pouch)
- 3/4 cup chopped peanuts (or other nuts)
- 4 Tablespoons of peanut butter (warmed in the microwave to make it soft)
- 4 Tablespoons of honey (warmed in the microwave to make it runny)
If your granola is really chunky, pulse it quickly in a blender or processor to make the pieces smaller. You can do this with the peanuts too. Then, stir the granola, nuts, peanut butter and honey together until it’s well blended. Push the mixture into twelve sections of a greased cupcake pan. Pop the pan into the freezer for 15 minutes (or until the cups are firm).
Peanut Butter Layer:
- 1 cup of peanut butter
“Melt” the peanut butter in the microwave until it becomes soft and fluid. Spoon it into the twelve granola cups and return the pan to the freezer until firm.
Chocolate Layer:
- 1 cup of dark chocolate chips
- 1 Tablespoon of coconut oil
Melt the chocolate chips and coconut oil together. I heated mine for one minute and then stirred until the chips melted completely. Spoon the chocolate mixture on top of the peanut butter layer. Chill in the refrigerator until set. Store the cups in the refrigerator or freeze them for longer storage.
And, there you have it, a low sugar dessert that actually tastes good!
