These Zucchini Pizza Slices were so delicious, and they were perfect, since we basically have zucchini coming out of our ears from the garden. I know you guys will be pleasantly surprised by these. I think the fresh basil really adds a great flavor and of course, the pepperoni doesn’t hurt.
This recipe is rather simple and there isn’t really a ‘right’ way to make these so, I’m just going to walk through what we did. When you make these, just use whatever pizza toppings you like!
Chop a large zucchini into medium-thin slices. Pre-heat your oven to 400 degrees and grease the bottom of each zucchini slice, with a touch of olive oil. Place a metal rack on top of a cookie sheet and then spread the zucchini slices over the rack. Bake them for about 10 minutes, or until they begin to soften.
While the zucchini slices pre-bake, roughly chop up a large bunch of fresh basil.
After the zucchini slices are done baking, spread on some tomato sauce, sprinkle on some black pepper and also sprinkle on some Italian seasoning.
Next, add on the fresh basil.
Generously top with pepperoni.
Lastly, top with shredded cheese.

Bake in a pre-heated 400 degree oven for 15 minutes, or until lightly brown and bubbly.
