It’s berry season! And, that means all kinds of yummy berry treats.
Whether you call it a galette, a rustic tart or a crostini, one thing I’m sure of is that you will call this delicious!
This recipe is one of the easiest berry desserts you will ever make.
Blueberry Galette
- 2 cups (about one pint) of blueberries
- ¼ cup of sugar
- 2 Tablespoons of corn starch
- 1 ½ teaspoons of lemon juice
- 1 Tablespoon of butter cut into 6-8 pieces
- 1 egg
- 1 Tablespoon of water
- 2 Tablespoons of raw sugar (or regular) to sprinkle
- 1 round store-bought pie crust (like Pillsbury’s)
Heat your oven to 425 degrees. Cover a baking sheet with parchment paper and lay the crust on top.
Stir together: the berries, sugar and corn starch. Spoon this mixture into the center of the pie dough, leaving a 2 inch border around the edges. Sprinkle the fruit with the lemon juice. Fold the dough edges in, pleating as you go. Dot the exposed berries with the butter.
In a mug, beat the egg and water with a fork. Brush the egg mixture over the crust and sprinkle it with sugar.
Bake for 20-23 minutes or until the crust is golden brown. Cool for 10 minutes and serve with a scoop of vanilla ice cream.
