I am not one to freeze food so I can use it later in a homemade soup. I don’t have the creativity to take a random assortment of items from my refrigerator and somehow whip up an amazing meal. I do love cooking for my family and if I have a recipe, I can follow it. But that is pretty much the extent of my abilities in the kitchen.
While I was by no means saving over-ripe bananas, I happened to come across this recipe the other day. The same day I would normally have thrown those bananas right into the compost without a second thought.
This takes just four ingredients and they ended up being too good not to share.
Ingredients:
- 2 bananas (they’ll mash easier if they are ripe)
- ¼ cup peanut butter
- 1 cup oats
- ¼ -½ cup chocolate chips
Tools/Utensils:
- Parchment paper (optional but so much easier)
- Air fryer (you could put these in the oven as well)
Cooking Instructions:
- Mix everything together
- Pre-heat air fryer to 350 degrees
- Using a cookie scoop (if you have one), scoop mixture directly onto parchment lined air fryer
- Using the back of a fork, mold the scoops into cookie form (lightly press on them)
- Place in the air fryer for 9-10 minutes
They were a little crunchy on the outside but soft on the inside. While they were not my kids’ new favorite cookie, they did pass the kid test and got a thumbs up.
