With only three ingredients, this nutrient packed snack is not only easy to make but very delicious too!
These gluten free kale crackers are loaded with protein and veggies and have a beautiful naturally green color. This super easy recipe is my current guilt free treat. Huge bonus points because the children loved it. It checks all the boxes!
Ingredients
1 Egg
Large handful Kale
1 ½ Cups Fine Almond Flour
Pinch of salt (optional)
Instructions
Preheat oven to 350F
Blend kale and egg until smooth (add just a splash of water to help with blending if needed)
Combine blended ingredients with almond flour in a large mixing bowl
Place your dough on a silicone baking mat or baking tray lined with aluminum foil then cover with parchment and roll to about 1/8-inch thickness
Gently remove parchment and cut into desired shapes. I used a pizza cutter which makes it so much easier to cut into cute little squares
For a beautiful finish, poke holes in the middle of each square with a fork or toothpick
Bake at 350F for 15 minutes (leave an extra minute or two for more crisp crackers)
Cool and enjoy!
Variations
*Use a blend of almond flour and coconut flour to create a lovely flavor profile.
*Switch out the Kale for Baby Spinach.
