These sweet, simple, and flavorful baked donuts are delicious plain with some coffee, and go well with any glaze or topping. If you are crazy about the flavors of Fall like I am, I highly recommend this recipe!
Ingredients:
Donuts:
- 1 cup sour cream
- 1 tsp vanilla extract
- 2 eggs
- ½ cup vegetable oil
- 1 cup sugar
- 2 cups Bob’s Red Mill Gluten-Free Flour
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp nutmeg
- Donut pan
Pecan Streusel:
- ½ cup brown sugar
- ½ cup chopped pecans
- ¼ cup Bob’s Red Mill Gluten-Free flour(or equal parts regular flour)
- 1 tsp cinnamon
- 3 tbsp melted butter
Maple Glaze:
- 2 tbsp pure maple syrup
- 1 cup powdered sugar
- 2-3 tsp half and half or milk
Directions:
To make the streusel:
Combine all ingredients in a medium bowl until mixture is crumbly. Set aside.
To make the Donuts:
Preheat oven to 350.
Mix sour cream, eggs, vanilla, sugar, and vegetable oil in large bowl.
Whisk dry ingredients in small bowl, then combine with wet ingredients and mix until smooth.
Spray donut pan with cooking spray.
Using the mixing spoon, scoop donut batter into half of the donut mold at a time.
Smooth the batter out so it fills the mold evenly. (I use my finger so I don’t get the batter all over the pan)
Bake for 13-14 minutes.
Allow to cool for ten minutes, then carefully place hot donuts on a cooling rack that has paper towels or foil underneath. (this will help with the glaze drippings)
You can use a cereal spoon to help you lift one side of the donut out of the pan if you need to.
For the Glaze:
Combine maple syrup and powdered sugar in a small bowl. Start with 2 tsp milk or half and half until the glaze is smooth and reaches a desired consistency for dipping. Add another tsp of milk or half and half if needed.
While donuts are still warm, dip upside-down into the glaze or smooth glaze over the donuts with a spoon. Sprinkle streusel over the glaze and enjoy!
Variations:
- You can add 1 tsp of cinnamon to the donuts along with the other dry ingredients for some extra fall flavor.
- If you want to leave the streusel out, the maple glaze is delicious on its own!
- Add sprinkles.
- Dip in a cinnamon-sugar mix instead of a glaze.
Chocolate Glaze:
- 1 cup chocolate chips
- 2-4 tsp half and half
Pour ingredients into microwave safe bowl, heat for 30 seconds and mix well. Heat for 15 seconds at a time if chocolate chips aren’t melted yet. Dip donuts in glaze or spoon onto donuts.
Vanilla Glaze:
- 1 cup powdered sugar
- 2-4 tbsp milk or half and half
- ½ tsp vanilla
Combine ingredients in small bowl until smooth and dip donuts in glaze.
Store in air-tight container for 2-3 days. Makes 12 servings.
