I do my best to have homecooked meals during the week. Over the years, my family have become creatures of habits and we often have the same several things rotate through our weekly menu. Tacos is consistently on our menu every single week. My daughter is a vegetarian so it’s easy for me to give her beans or impossible meat as her protein and all other ingredients are those that we can all eat.
Our tacos are pretty basic with store bought shells or tortillas and pre-shredded lettuce. I am all about convenience so I typically buy pre-cut or I chop up onions and tomatoes along with other veggies on Sundays so it’s easy for me to pop into meals throughout the week.
While my family and I are perfectly happy with our weekly helping of basic tacos, I do love to change it up once in a while to make it even better. The nice part is it takes just a smidge more work than my typical way of preparing them.
The big benefit is that this other way makes our tacos
taste like Taco Time tacos.
I actually started this years ago when I was pregnant. I asked my doctor what the healthiest fast food restaurants were. I was pleasantly surprised when she said that Taco Time, depending on what you order, can be a good option. That was the start of a long-term love affair with Taco Time and it continues to this day.
I was in a recipe swap circle through church and happened upon a recipe for copy cat Taco Time beef. I knew I had to try it.
If you are looking to change up a standard taco Tuesday in your house without spending money or gaining extra calories on fast food, look no further.
Ingredients:
1 lb lean ground beef (I have also made with impossible meat and it’s awesome)
1 Tbsp minced onion
1 ½ tsp instant beef bouillon
1 tsp chili powder
¼ tsp salt
1/8 tsp minced garlic (I used the jarred already minced and ready)
½ tsp ground cumin
Optional: Cheese, tortillas, lettuce, sour cream, nonfat Greek yogurt as a sour cream alternative
Directions:
Cook beef (I use a bit of spray olive oil in the pan)
Add all ingredients in a small dish and mix
Add ingredients to the cooked beef and stir it all in
Serve on top of lettuce as a taco salad or in a tortilla for a burrito
