If you are like me and are always looking for ways to incorporate healthy ingredients into tasty treats, then this delicious fruit and nut muffin recipe is for you!
The freshly squeezed orange juice adds a special touch. I love to do my cooking from scratch; that way, I control every ingredient that gets into the food I prepare for my family, trying as best as I can to ensure healthy and nutritious ingredients. You will also notice that the sugar is half the regular quantity that recipes like this call for, because of the natural sweetness that the fruits bring to this recipe. We do not want to over do it with the sugar.
High in fibre, made with nutritious fruit, veggies and nuts, these moist and delicious muffins pack a punch of energy and flavor.

What you will need:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 3 large eggs
- 3/4 cup coconut oil
- 1/4 cup freshly squeezed orange juice
- 2 teaspoons vanilla extract
- 2 cups grated carrots
- 1 apple, peeled and grated
- 1/2 cup shredded coconut
- 1/2 cup raisins
- 1/2 cup chopped walnuts or pecans
Let’s get baking!
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, cinnamon, and salt.
In another bowl, whisk together the eggs, coconut oil, orange juice, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until just combined.
Now fold in the good stuff: grated apple, grated carrots, shredded coconut, raisins, and chopped nuts.
Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Bake for about 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
