Is your shopping done yet? Ours is finally finished, homemade gifts are finished and the final plan for Christmas is in place! I feel like I’m finally able to take a breath and really enjoy the rest of this week.
We decided to make some Monster Butterscotch Pecan Cookies and since the recipe turned out to be a winner, I thought I’d share it. These cookies are huge and perfectly delicious. I’m sure that if you make cookies for Santa, he would just love these. After all, Santa does like huge cookies, right?
Butterscotch Pecan Monster Cookies
3/4 cup butter, softened
3/4 cup white sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups rolled oats
1 2/3 cups butterscotch chips
1 cup crushed pecans
Optional: white chocolate chips or vanilla almond bark for drizzling
Preheat oven to 375 degrees F (190 degrees C). Cover baking sheet with parchment paper.
In a large bowl beat the butter, white sugar and brown sugar together. Add the eggs and vanilla, beating well.
Stir together the flour, baking soda, cinnamon and salt. Gradually add the flour mixture to the butter mixture and stir until blended. Stir in the oats, the butterscotch chips and the chopped pecans.
Roll dough into huge balls (think large meatball), place 3 balls of dough onto the baking sheet and then flatten out with your hand.
Bake for 8 to 10 minutes in the preheated oven, until the edges begin to brown. Cool for 2 minutes before moving to wire rack.
Once cookies are completely cooled, drizzle with melted white chocolate or vanilla almond bark.
Makes 15 monster-sized cookies.
