Our family loves camping. We camped before kids, we camped when they were infants, and we’re still going strong today. Though some trips have been easier than others, we haven’t regretted a single one.

One fun activity we do together is campfire cooking, but it can be tricky to get things right. The unpredictability of the heat can make things burn on the outside while remaining raw on the inside. So, when you’re just starting out, follow these two tips:
1. Stick with simple recipes.
2. Use charcoal instead of a campfire.
Once you’ve mastered a few tried-and true recipes, you can level up your campfire cooking game. But even after you’re an outdoor culinary master, you’ll keep this recipe in your repertoire. It’s fast, easy, and a guaranteed hit with the kids.
Campfire Corn Dogs
Ingredients:
● Hot dogs
● Corn muffin mix (+ preparation ingredients as listed on the box); I recommend the traditional recipe vs. “honey” cornbread varieties as they tend to get too sweet and the sugar burns quickly
● Cooking spray
Special materials/equipment:
● Charcoal
● Pie irons
Instructions:
1. Light charcoal and allow to burn until it’s ready for cooking. Follow instructions on the package for exact method and timing.
2. Mix cornbread muffin mix according to package directions. Set aside.
3. Cut hot dogs into halves or thirds (depending on the size of your ‘dogs and your pie irons).
4. Spray pie irons with cooking spray and layer a scoop of corn muffin mix, 2-3 hot dog pieces, and more corn muffin mix.
5. Close pie irons and place directly on charcoal, cooking each side for 4-5 minutes.
