All day yesterday I was craving pizza. But it was a Wednesday, and ever since my 24 day Advocare Challenge completion, I made the decision to continue making smart food decisions during the week. Pizza doesn’t really fall under the realm of healthy decisions in my book so I was in quite a dilemma.
But on my drive home from work, I entertained a thought: I wonder if those cauliflower pizza crust recipes I’ve seen are actually any good?
Could cauliflower really be a believable replacement for crust? I was skeptical. But I was also desperate to eat pizza.
So I went for it.
And…
It. Was. Delicious.
I am not kidding you. My husband and I were amazed. My one and four year old kids gobbled it up as I had one of those rare “oh I am such a clever mom” moments. I made one half with toppings my husband and I like (pesto, grilled chicken, prosciuttto, and parmesan cheese) and the other a bit more kid friendly (red sauce and string cheese).
Here is the easy recipe:
Cauliflower– one head (cut it up and keep just the florets)
Flour- one tablespoon. I used Almond flour but any would work.
Eggs– 1-2; I am going to try egg whites next time as I bet it would work.
Parmesan Cheese– About ½ cup.
Salt and Pepper– Just a sprinkling of each.
Sauce and Toppings of your choice!
Tools– dish towel, mixing bowl, cookie sheet, parchment paper, and food processor or strong blender
- Blend up the cauliflower. I had to do this in two batches as my food processer wouldn’t fit it all.
- Place blended cauliflower in a dishtowel and ring out all the moisture (I was shocked at how much there was!).
- Place in a mixing bowl.
- Add all crust ingredients and mix.
- Place on parchment covered cookie sheet and spread out with hands.
- Place in a 450 degree preheated oven for about 15 minutes.
- Pull out and place your sauce/additional cheese/toppings.
- Place back in oven until toppings are baked/bubbly
- Cut and enjoy!
