If you have followed me here at All Mom Does at all, you will know I am not the “savvy recipe mom.” We leave that role to Kristina. This being said, when I write about a recipe, it usually means two things. 1) It’s good, and 2) It’s easy.
I came across this recipe and when it claimed to taste like the lettuce wraps at PF Chang’s, I knew I had to try it.
It is AMAZING and so easy.
You’ll Need:
- 1 tablespoon olive oil
- 1 pound ground chicken (you can buy ground chicken or just cut up whatever you have, it doesn’t need to be ground if you don’t have that available)
- 2 cloves garlic, minced
- 1 onion, diced
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoon freshly grated ginger (I skipped this because I am not a huge ginger fan and it was still AMAZING)
- 1 tablespoon Sriracha, optional but I highly recommend it
- 1 (8-ounce) can whole water chestnuts, drained and diced
- 2 green onions, thinly sliced
- Kosher salt and freshly ground black pepper, to taste
- 1 head butter lettuce (this is the best kind that won’t break when you wrap something in it!)
Directions:
1. Heat olive oil in a saucepan over medium high heat. Add ground chicken and cook until browned, about 3-5 minutes, making sure to crumble the chicken as it cooks; drain excess fat.
2. Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger (no ginger for me) and Sriracha until onions have become translucent, about 1-2 minutes.
3. Stir in water chestnuts and green onions until tender, about 1-2 minutes; season with salt and pepper to taste.
4. To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, taco-style.
I also find this amazing to just eat without making it a wrap. I put the leftovers in a Tupperware and heated it up at work the next day without messing with lettuce.
