If you’re looking for a quiche recipe that will check all the boxes, this is it! It has a perfect savory filling and a fluffy hash brown crust. The best part is that you get all the lovely quiche ingredients without stressing over a gluten free crust recipe! Whether you serve this bacon-filled beauty for Easter brunch or want to enjoy it all through the year, I think this recipe will exceed your expectations. Best served with some fruit and homemade gluten-free donuts or a nice blueberry coffee cake.

Ingredients:
1 30oz bag frozen hash browns
3 Tbsp. butter or Olive oil
2 tsp smoked paprika, divided
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
8 slices of bacon
1/3 cup diced green onions
6 eggs
1 cup milk
1/3 cup half and half
1 cup sharp cheddar cheese, shredded
Directions:
Place unopened bag of frozen hash browns in the microwave, cook for a few minutes on each side to speed up the defrost process.
While you do that, preheat a large, deep skillet or pot to med-high and add butter or oil to the pan. Pour in the hash browns.
Season them with 1 tsp smoked paprika, about 2 tsp salt and 1 tsp pepper, onion powder, and garlic powder.
Cook until golden brown. I find it easiest to let them sit for 5-10 minutes at a time then flip them over with a spatula. Continue that process until cooked through and slightly crisp.
Pour the hash browns into a 9 inch pie pan. Use a measuring cup to press the potatoes down and spread evenly along the sides to form the crust.
Meanwhile, preheat another pan to medium heat, chop bacon slices and add to pan. Cook until crisp. Drain the grease and then cook the green onions for a minute or two until slightly soft.
In a mixing bowl, add eggs, milk, half and half, 1 tsp smoked paprika, salt and pepper to taste, and the shredded cheese. Mix in the bacon and green onions.
Pour mixture over the hash browns.
Bake uncovered at 375 degrees for 50-55 minutes or until the top is golden and the quiche is set.
Allow to rest for 10 minutes before serving.

Tips:
- You can make the bacon a day or two in advance if you want to save some time.
- Substitute the cheddar for pepper-jack if you want a little spice!
- Diced ham works in place of the bacon.
- ½ cup of diced bell peppers can be added but you might need to cook it a few minutes longer as that will add some liquid to the dish!
- Make-ahead directions are just the same. To reheat it, cover with foil and bake at 375 degrees for around 20 minutes.
