You guys know one of my favorite things is to figure out how to creatively use up leftovers. So the week after Easter is one of my favorite weeks of the year because I get to enjoy my leftover Hempler’s ham all week long!

Hempler’s ham is my absolute favorite, and it adds terrific flavor to any dish. This week, get in the kitchen and exercise some creativity to whip up a fantastic dinner using the stuff you’ve already got in your fridge. Some of the best ways to use up leftover ham are:
- Fried rice – You can use your ham, but also leftover veggies like asparagus, green beans, or corn.
- Chef’s salad – Use up leftover boiled Easter eggs along with your ham for a light and super quick dinner!
- Soup – Potato soup with ham, split pea soup, bean soup…the possibilities are endless.
- Breakfast casserole – Use diced ham as extra protein in your favorite breakfast casserole recipe and your mornings will start off right all week long!
- Hawaiian pizza – Get the whole family involved for a homemade pizza night!
- Chicken cordon bleu – Whether you make the real thing or a pasta dish that combines all the same flavors, the salty and tangy combo of ham and swiss will make a dinner to die for.
- Pot pie – This will come together in a snap if you wrap your creamy combo of ham, peas, and other veggies with a store-bought pie crust.
- Grilled ham & cheese – It’s amazing how the addition of one simple ingredient can change your boring old grilled cheese.
- Loaded potato casserole – Combine your potatoes and ham into a casserole nobody will recognize as leftovers from Easter dinner.
- Glazed ham & cheese sliders – Slice your leftover Easter dinner rolls, pile them with ham and cheese, drizzle it all in a brown sugar glaze and bake for a meal that will be an absolute hit.
- Ham & sweet potato hash – A veggie-packed hash will be a fantastic breakfast to start the day off right!
If you don’t think you’ll use all your leftover ham right away, the good news is that it freezes really well. So package it up and toss it in the freezer, and you’ll have it to use in a quick, easy, and delicious dinner another night!
