I am in the office five days a week and try to bring my lunch at least four of those days. Not only does it save money but it also means I am less likely to grab something unhealthy just out of convenience. Protein helps keeps us fuller for longer so I try to incorporate that into my lunch each day.
This recipe is a pizza in a bowl and is seriously so good that I eat it multiple times a week sometimes.
Here is all you need:
- Cottage cheese ½-1 cup. I know many of you are put off by cottage cheese. Try the Good Culture brand. It turned me from thinking cottage cheese was gross to actually enjoying it.
- Pizza sauce 2Tbsp or to your liking. I use the Trader Joe’s brand but any brand will do
- Flour ½-1Tbsp optional. This is just to soak up some of the liquid.
- Any pizza toppings you like! I typically use pepperoni, olives, bell pepper, cheese and red pepper flakes. But literally anything you like in a pizza, throw it in!
All you do is stir all ingredients together in a bowl.
When you are ready to eat, microwave for around 2 minutes until heated how you like it.
This is an easy lunch to make the night before and then just grab on your way into work in the morning.
