Making s’mores by the fire is fun. It’s also super messy, someone always cries when their marshmallow falls in the fire or burns to a crisp or someone gets hurt with the pointy stick. Also, you need a fire. While this is one way memories are made, I decided to forgo the pain (ok and maybe some of the fun) and am making this delicious S’mores Bars recipe for the 4th of July this year.
You need:
- Heavy Cream (1 cup)
- Semi sweet chocolate chips (1 ½ cups)
- Graham crackers (4 ounces or basically enough to cover the base of your pan once they are crumbled)
- Sugar (2 TBS)
- Melted butter (4 TBS)
- Mini marshmallows (1 ½ cups)
Directions:
- Preheat oven to 350 degrees
- Line 8X8 baking pan with parchment paper (tip, if you want the parchment to stick better, lightly spray the pan with butter)
- Warm the heavy cream in a small pan over medium heat
- Remove cream from heat when it begins to bubble at the edges
- Slowly add in the chocolate chips, stirring as they melt until it becomes thick and well combined
- Set aside that mixture to cool
- Crush graham crackers into a pretty fine crumb into a bowl
- Add in sugar and melted butter and mix all together
- Bake graham crackers/sugar/butter mixture in the 350 degree oven for about 7 minutes
- Let cool
- Pour the chocolate chip/cream mixture over the crumbs and spread it out evenly
- Place pan in fridge and allow to cool
- Place the marshmallows on top (use as many as you’d like. I typically cover mine completely)
- Place the pan in the oven on Broil setting until the marshmallows turn toasted (tip, do not leave unattended!)
- Cut the bars into squares and enjoy!
TIPS:
I have also added or substituted Reese’s Peanut Butter Cups (chop up a bit) and my kids love it!
I allow to cool before I cut making this a great make ahead dessert for parties!
