The weather here in the Pacific Northwest isn’t showing all signs of summer quite yet. But this refreshing and filling salad has been hitting the spot for my family and I lately. I imagine when the weather heats up, it might just make things like crisp lettuce and fresh cucumber sound all that more yummy.
No matter how you go about this salad, it’s going to be simple. For me, I don’t waste time with things like hard-boiling my own eggs. Here is my extra simple way to make an extra yummy cobb salad.
4-6 servings (for us, it’s good for 2 kids and 2 adults)
You’ll need:
Iceberg or Romaine Lettuce. Try buying the bagged kind that is already washed and chopped or shredded.
Cooked Bacon. About 6 slices. I buy the kind that is already cooked so all I have to do is warm it up. Chop or crumble.
Chicken Meat. About 6 cups chopped, cubed or in strips. As another time saver, I buy the frozen already cooked kind and simply put it onto the stovetop to warm up and get a bit of an extra grill onto it.
Tomatoes. About 2 large. Chopped or wedged, depending on how you like it. Or, for a time saver, just throw little cherry tomatoes in there or maybe cut them into halves.
Blue Cheese Crumbles. About ¾ cup. I put this on the side because my family isn’t all a huge fan of the blue cheese.
Avocado. 1-2. Peeled pitted and diced. I love this tool that splits, pits and slices the avocado.
Cucumber. 1 medium or large.
Hard Boiled Eggs. 2-4. Hard boil them yourself or do like I do and buy them already hard-boiled.
Salad Dressing. Traditionally it would call for blue cheese. We also have used Ranch or my new favorite from Trader Joes, Green Goddess Dressing.
Easy Steps:
Evenly divide lettuce into bowls
Evenly divide all ingredients (except dressing) into bowls. I also put the blue cheese crumbles on the side since not everyone likes them in my house.
Toss in dressing of choice
If serving for guests~ Arrange on a large platter for presentation and serve from there. This salad is so easy and can look super appealing as a side or even main dish at a dinner party.
I usually pair with hearty bread or some Parmesan crackers.
