Weeknight dinners can be tough. It’s easy to fall into a rut or default to convenience foods. Today I’m sharing a quick & easy weeknight meal that’s always a huge winner in my house – with kids and adults alike.
These ground chicken gyros aren’t exactly authentic Greek cuisine, but they’re fresh-tasting, full of flavor, and fast. With the help of a couple ingredient shortcuts (no, you don’t have to make tzatziki on a weeknight), dinner will be on the table in the time it takes you to brown a pound of ground meat. And since the toppings are added at the table, your picky eaters can customize their plates to their liking.
It’s a winner all around!
Ground Chicken Gyros
Makes 4 servings. Recipe easily doubles. It also reheats well so can be made in advance if needed.
Ingredients:
- 1 lb. ground chicken
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1 tsp. oregano
- 1 tsp. parsley
- 1/2 tsp. salt
- 1 pkg. pita bread (can substitute naan or flatbread if you can’t find it)
- red onion
- cucumber
- feta cheese
- Tzatziki Ranch Dressing by Litehouse (can substitute regular ranch dressing if you can’t find it)
Cooking Instructions:
- Brown ground chicken with seasonings.
- While chicken is browning, slice red onions, chop cucumbers, and heat pita bread.
- Serve all components separately at the table. Dish meat onto the pita and top with cucumbers, red onions, feta, and dressing as desired.
- Pat yourself on the back for finding a meal that’s a hit with the whole family!
