You might not think of English muffins when you are looking for a quick and easy weeknight meal for the kids, but these little guys are fun and filling! My family loves pizza, but sometimes I don’t want to order it nor do I feel up to making it from scratch. These work great if you want to have the kids put their own toppings on and they are much easier to work with than sticky pizza dough.
You can use whatever toppings your family enjoys, but in October it’s always fun to add some creepy crawlies to a recipe! Not all my kids like olives, but I still put these cute spiders on for everyone and they can just pick them off if they aren’t fans. I hope your family enjoys these eight-legged treats!
You’ll need:
1 package of English muffins
8 oz shredded mozzarella
1 jar of pizza sauce (or marinara)
1 can olives
1 baking sheet covered with foil for easy clean-up
Additional toppings: pepperoni, salami, veggies, fresh basil, parmesan, dried Italian herbs
Directions:
Preheat oven to 400 degrees.
Lay foil out on the cookie sheet.
Separate English muffins and spoon on enough pizza sauce to cover the bread.
Sprinkle mozzarella and any additional toppings.
For the olive spiders:
Slice one olive in half lengthwise. Lay each one on a pizza. This will be the body.
Slice another olive in half lengthwise and cut that piece in half for the spider heads.
Slice a few more olives lengthwise and then slice them into thin segments for the spider legs.
Bake for 6-7 minutes or until cheese is melted.
Best served with some fresh veggies or fruit!
