Hi, I’m Erica and I like carbs. A LOT. I am now embracing a healthier lifestyle and I want you to know… you CAN bake and be healthy! Thanks to my friend Lisa, I discovered Grace Oat Bread! This is a recipe modified from Weight Watchers. It’s an option for breakfast and it also makes a filling snack. YES. It is taking the edge off my craving for a scone. I appreciate how dense this bread is. There are lots of flavor options if you search “grace oat bread,” including a pumpkin version. I also just like the name cause it’s a good reminder to give yourself GRACE. Hope this blesses you too!
Ingredients:
- 3 and 3/4 cups oats
- 1/2 teaspoon salt
- 2 teaspoons baking soda
- 2 cups fat-free yogurt (I used Greek vanilla)
- 1 beaten egg
- 1/2 teaspoon almond extract (Optional ~ I added this for added flavor)
- 1 teaspoon poppy seeds (Optional ~ I added this for a bit of crunch)
Directions:
- Stir all ingredients together and smoosh (yes, smoosh is the technical term) into a non-stick sprayed 3 X 5 dish.
- Bake at 365 for 40 minutes.
Serving Note: Grace oat bread is delicious with a smidge of jam. I use Organics fruit spread – it has a lot fewer carbs and you can find it at Safeway. ENJOY!
