With the weather being mostly grey and way colder than usual these past couple of weeks, a hearty chicken soup is like food for the soul. There is something just so special about the aroma of homemade chicken soup filling the kitchen. Snuggling up in your favorite blankie and enjoying this hearty chicken soup feels like a warm hug from a loved one.
This delicious, flavorful, soul soothing soup also has wonderful healing ingredients like garlic, onion, parsley and rosemary so hurry and make this soup if anyone in your house is fighting a cold.

Ingredients:
- 2 Tbsp Olive oil or Butter
- 1 Large Onion (diced)
- 1 Medium Sweet Bell Pepper (diced)
- 4 Cloves Garlic (minced)
- 3 Medium Tomatoes (diced)
- 5 Sprigs Fresh Parsley (chopped)
- 2 Sprigs Rosemary
- 3 Tbsp Tomato paste
- Spices: Cayenne pepper, Curry powder, Parsley, Salt
- 2 Medium Irish potatoes (peeled and diced)
- 5 Pieces Chicken leg quarters (skinless)
Instructions:
Place a large pot on medium heat and add the oil/butter.
Once the oil/butter is heated up, add the onions and sweet peppers. Cook for a few minutes, until the onions are slightly browned.
Next, add the garlic, diced tomatoes and salt. Let these cook for a further two minutes while stirring occasionally.
Stir in the Parsley, Rosemary, Spices (adjust spice amount according to your preference) and tomato paste.
Add the chicken and potatoes, then fill the pot with water till it just barely covers the chicken.
Let simmer on medium low for 30minutes or until the chicken is fully cooked. Enjoy!
