Is there a better lunch combination than tomato soup and a grilled cheese sandwich? Sure, you can pop open a can of Campbell’s, but I have a recipe for tomato soup that’s almost as easy and it has the bonus of having added protein hidden inside.
Hearty Tomato Soup
- 1 Tablespoon olive oil
- 1 diced onion
- 2 cloves of minced garlic
- 1 ½ teaspoons of Italian seasoning
- ½ teaspoon of dried basil
- 1 – 6 ounce can tomato paste
- 2 – 14.5 ounce cans of diced tomatoes
- 1 – 15 ounce can of cannellini beans drained and rinsed
- 1 – 32 ounce carton of vegetable or chicken stock
- ½ teaspoon pepper
In a stockpot, sauté the diced onion in olive oil for 5 – 6 minutes over medium-high heat. Add in the chopped garlic, Italian seasoning, basil and the tomato paste and sauté for another minute.
Pour the two cans of diced tomatoes and the drained beans into a blender, pour your onion mixture on top and blend until you reach your desired smoothness (I like mine a little chunky). Return the blended mixture back into your pot and stir in the carton of soup stock and the pepper. Bring the soup to a boil, lower the heat and cover. Simmer for ten minutes.
While it simmers, make your grilled cheese sandwiches and everything will be done at the same time!
Variations: Add extra spices if you prefer spicy food. I used all low sodium products because I’m on a low salt diet. Cans of diced tomatoes now come with all kinds of added spices, experiment with your favorites. Top your soup with grated cheese, cracked pepper or goldfish crackers. The possibilities are endless!
