This morning, about 5 minutes after I finished my breakfast, I busted out a garbage bag and I literally threw away all of the sweets in our house. Well, I saved the kids stocking candy for them, because that would have simply been mean but, besides that- all the sweets went into the garbage. And it felt good. Really good.
I love, love, love Christmas but, the only downside is all of the junk food that’s left over.
So anyway.
The leftover ham was too delicious to toss out so, I made our favorite Hearty Split Pea Soup with it. This recipe is a slow-cooker recipe and it’s totally delicious and easy. Basically, you throw all of the ingredients into your crock pot, don’t stir it, come back 4-6 hours later, add a touch of milk and then serve it.
16 ounces dried split peas
2 cups diced fully cooked ham
1 1/2 cups diced carrots
1/2 cup diced celery
1 medium onion, chopped
2 garlic cloves, minced
salt and pepper, to taste
2 sprigs rosemary (to be taken out after the soup is cooked)
7 cups boiling water
1 cup hot milk
In a slow cooker, layer the first 9 ingredients, in the order listed. Do not stir. Cover and cook on high for 4-5 hours, or until vegetables are tender. Stir in milk and discard rosemary sprigs before serving.
