Give that left-over rice new life by making this stunning dish. The ingredients used bring more than vibrant color to the table, as this rice dish is full of nutritious vegetables like spring onion, peppers, carrot, corn, cilantro and even peas. Being homemade, you are able to customize the ingredients to fit your taste and spice levels.
Ingredients
- 2 cups left-over rice
- 3 Tbsp. coconut oil
- 1 medium carrot, peeled and diced
- 1 sweet bell pepper (any color will do) diced
- 1 medium onion, diced
- 3 stalks spring onion, diced
- 2 medium tomatoes, diced
- 4 cloves garlic, minced
- 2 Tbsp. tomato paste
- 1 tsp chili flakes
- 1 tsp curry powder
- 1 tsp salt
- ½ cup frozen corn kernels
- ½ cup frozen peas
- handful chopped fresh cilantro
Instructions
1. Add the coconut oil to a large skillet and sauté the diced onions, carrot and peppers over medium heat for about 2 minutes, stirring frequently.
2. When the vegetables start to soften, then add the minced garlic and cook till fragrant (about 30 seconds).
3. Stir in the diced spring onion, tomatoes, tomato paste, corn, peas, salt and spices until all is well incorporated. Let this cook for 5 minutes while stirring occasionally.
4. Fluff up your left over rice with a fork and add this to the skillet as well. Continue to stir to bring your dish together.
5. Turn off the heat and cover the rice for 5 to 10 minutes.
6. Fluff up with a fork again, garnish with the fresh cilantro.
