I have turned a new leaf (kind of) while having so much more time at home this past year: I have started cooking more than I used to. Still, one non-negotiable remains. Recipes have to be easy.
I am all about convenience when cooking. That is why when I make things like butternut squash soup, I buy the pre-cut squash. I also buy pre-minced garlic so I don’t have to ever mess with cutting that up. When I find a recipe that is easy, good, and that my kids will actually eat I know I have a winner. I actually found this recipe on TikTok, my new favorite app. In just a few simple steps with a few simple ingredients, you can have dinner for your family and the vegetable is baked right in!
You’ll need:
- Whole grape or cherry tomatoes- one container which is usually about 10 ounces
- Block of feta cheese- one block which is usually about 7 ounces. You can use other cheeses such as Boursin. I tried both and liked the feta much better.
- Olive oil– a few tablespoons to drizzle around
- Minced garlic- We love garlic so I used my pre-minced garlic that equaled a couple of cloves
- Pasta– your choice. My kids are picky so I catered to a noodle I know they like
- Italian Seasoning, Basil and chili flakes– optional to garnish/add some spice
Easy steps:
- Pre-heat oven to 400
- Drizzle pan with olive oil (I used a 9 ½ by 13 dish)
- Pour washed tomatoes into a baking dish
- Mix so tomatoes are coated with the oil
- Mix in garlic
- Set the cheese block in the center of the tomato/olive oil
- Drizzle a little more olive oil over the top of the cheese
- Add in seasoning of your choice (I used Italian seasoning)
- Bake for 30-40 minutes
- Cook your pasta when the oven mixture is close to ready
- Pull out the tomato mixture. Tomatoes will be blistered. Push down on the tomatoes so that they cream together with the cheese. This will make a lovely creamy sauce.
- Add the sauce to your drained pasta
- Garnish with basil if you prefer or add chili flakes for more heat
- Enjoy!
