I am terrified of the Instant Pot. I purchased one well over a year ago and have used it a total of zero times. It sits on the floor of our pantry because I am convinced one day I will work up the courage to give it a go. Until that day comes, I will continue being somewhat obsessed with a less scary kitchen appliance.
The air fryer.
Mom, if you don’t have one, add it to your list! It is possibly one of the best ever kitchen inventions. It not only will heat things quickly but also much healthier than other methods and will give foods like vegetables an amazing crispness that would take an oven at least twice the time to accomplish.
When I came across this recipe for egg bites, I was thrilled. I have a recipe for an Instant Pot version but out of sheer fear I have never made them. This recipe is so easy and you can customize it however you like. Bonus, if you buy these at Starbucks you will be able to now make your own and save money!
What you will need:
- Air Fryer- if you are looking into purchasing, I’d suggest bigger is better. I initially got one with a two quart capacity and quickly had to upgrade
- Silicone cupcake liners
- Eggs (one per silicone cup you are filling)
Any variety of veggies and protein, totally cater to your own taste buds!
I often use:
- Cheese
- Onion
- Diced tomatoes
- Bell Pepper
- Bacon (crumbled or packaged bacon bits)
- Salt & Pepper
- Milk (I add a couple of teaspoons)
Three easy steps:
- Mix all ingredients in a bowl
- Divide mixture into muffin cups
- Air fry at 300 degrees for about 10 minutes. You will want them very lightly browned on top.
You can store in the fridge for a few days and easily reheat in the microwave!
