It’s time for the March cookie of the month!
Isn’t it funny how most of us celebrate St. Patrick’s Day even though we have no connection to Ireland? I like to think we are all honorary Irishmen and women in March.
Whether you are attracted to green because of St. Patty’s Day, or because it also represents the coming of Spring, these cookies are the perfect addition to March. As a bonus, they are super easy to make. What could be better?
GREEN CRINKLES
Ingredients:
1 box white cake mix (15.25 ounces)
1/3 cup vegetable oil
2 large eggs
1 teaspoon vanilla or almond extract
Green food coloring
3 Tablespoons granulated sugar
6 Tablespoons powdered sugar
Instructions:
In a large bowl, stir together the cake mix, oil, eggs and extract. Add the green food coloring until you reach the green hue you want.
Cover the bowl and chill for 30 minutes.
Preheat the oven to 350 degrees and line your cookie sheets with parchment paper.
Put the sugars in two separate bowls.
Roll the dough into balls (heaping Tablespoon-sized). Roll the balls into the granulated sugar and then into the powdered sugar. Place on the cookie sheets about 2” apart.
Bake for 9-12 minutes (make sure the edges do not brown). Let them cool for 5 minutes on the cookie sheet before transferring to a wire rack.
Store them in a covered container in the refrigerator.
