Cornbread is one of my favorite sides to make for holiday celebrations. I don’t just make it during the holiday season however, my family loves this delicious and mouth watering treat all year round! Not only is this cornbread recipe a crowd favorite, it is so easy to make and does not require many ingredients. Let’s dive in!
Ingredients:
• 1 cup flour
• 1 cup yellow cornmeal
• 3 teaspoons baking powder
• ⅔ cup granulated sugar
• ⅔ cup margarine or softened butter
• 1 large eggs
• 1 cup water (or milk)
• 1 teaspoon vanilla extract
Directions:
1. Grease a 9-inch cake pan and set aside. Preheat the oven to 350 degrees.
2. In a mixing bowl, cream the sugar and butter (or margarine) until well blended.
3. Add the eggs, milk, baking powder and vanilla then combine well.
4. Mix in the flour and cornmeal then stir just until the mixture comes together and there are only a few lumps remaining.
5. Pour the batter into the prepared pan and bake for 20-25 minutes until the top is a deep golden brown and a toothpick inserted into the center comes out clean.
Variations: Sprinkle chocolate chips on top of the batter before baking.
