With sports in full swing and life flying by at break neck speed at my house, I can’t stress enough how important it is to eat well and find at least 10 ~ 15 min. a night to look each other in the face at the dinner table and catch up on “the happenings” in each other’s lives.
Especially as kids get older or if you work outside of the home, it’s so important to connect! This is a super simple quick and healthy dinner that you can whip up in a snap!
Ingredients:
- Homemade Pizza Dough or store bought (you can also use canned biscuits)
- 1 Can of Refried Beans (I use fat free)
- Salsa ~ any kind you like
- Shredded Cheese ~ any kind you like
- Optional ~ Sour Cream, Olives, Guacamole, Onions, Red Peppers
Directions:
Simply mix beans with some salsa to your taste. I like spicy! With Fat Free Beans sometimes you need to add just a tad of water to make it a more spreadable consistency.
Roll out your dough to a personal size that meets your family’s needs. Then top with beans…and cheese.
Bake in a 375 degree oven for about 20 min. While Bean Pizza is cooking, gather up the toppings and serve with Pizza.
The reason that I make individual Bean Pizzas and separate toppings…picky eaters! Makes them happy and they are more likely to try different toppings than if I simply put stuff on and assumed they would eat it.
