A diet that consists of boring food is no diet at all. I don’t think you can be successful if you’re not enjoying the foods you’re eating. So, this week I’m sharing some of my favorite recipes I’ve received through my journey with the Edmonds Ideal Weightloss Ideal Protein (hereafter referred to as: IP).
POTATO ROLLS: One packet of IP potatoes, 2 egg whites, 1/2 teaspoon baking powder, 1/8 teaspoon baking soda and a dash of rosemary and garlic powder. Preheat oven to 350 degrees and spray 4-6 muffin tins with oil. Beat the egg whites with a fork in a small bowl until they’re bubbly. Add the rest of ingredients and stir well. Fill the muffin tins 1/3 of the way and bake for 8-10 minutes. Slice and serve with veggies if desired.
ZUCCHINI OAT MUFFINS: One packet of IP oats, 1 beaten egg, ½ teaspoon baking powder, 1 packet of stevia or Splenda, 1 teaspoon cinnamon, ¾ of a small zucchini grated, 2 ounces of water. Beat the egg in a bowl and add the rest of the ingredients. Bake at 375 degrees for 20 minutes for full sized muffins or 10 minutes for mini muffins. Yummy!
ANN’S FAVORITE LATTE’: In a venti cup, get two shots of espresso over ice and add one bottle of IP Vanilla. This is so yummy, I can’t tell you!
ZUCCHINI FRITTERS: Shred 4 cups zucchini and squeeze the water out. Mix in 1 package IP potatoes, one egg (or two egg whites), 2 ounces of water, minced garlic to taste and salt and pepper. Stir well and cook in a sprayed frying pan as you would pancakes. Delicious!
POTATO PANCAKES: In your shaker jar, mix: one IP potato packet, one egg (or two egg whites), 2 ounces of water and ¼ teaspoon baking powder (add spices for optional flavor). Shake well and cook like pancakes. I love these and they are so moist and tender that you can eat them plain!
CHOCOLATE BARK: And, now for dessert! Mix one packet of dry IP pudding mix with 2 packets of stevia, 8 ounces of water and a dash of cinnamon (optional) in your IP shaker. Pour into a parchment lined cake pan and freeze until firm. Peel the chocolate off of the paper and break into pieces. This tastes like a decadent fudge bar!
I hope this gives you some ideas as you start your journey towards good health. Remember, that each Ideal Protein packet has just the right amount of protein in a form that your body can actually utilize. Eat and enjoy!
