With vibrant and beautiful fall colors, sausage stuffed butter nut squash is a dish that features squash, spinach, pecans, cranberries and sausage. Checking all the boxes for a delicious and nutritious recipe, it is packed with veggies, protein, fibre and is gluten free. This recipe is simple enough to make and can be served as a side or main dish.
Roasted Butternut Squash
Butternut squash
1 Tbsp Olive oil
¼ tsp salt
Black pepper
Sausage Stuffing
1 Tbsp Olive oil
1 Small onion, diced
1 lb Sausage, crumbled
2 Cloves garlic, minced
1 Tbsp Italian seasoning
1 Cup fresh spinach
½ Cup dried cranberries
½ Cup pecans, chopped
Instructions:
1. Preheat the oven to 400 F.
2. Prepare the butternut squash by slicing it in half lengthwise. Use a spoon to scoop out the seeds and fleshy strands tangled with the seeds.
(Tip: roast the seeds separately for a nutritious snack)
3. Place butternut squash cut sides up on a baking sheet. Drizzle the cut sides with olive oil, rubbing the oil into the squash, then season generously with salt and pepper.
4. Turn the squash halves over, placing it cut sides down on a baking sheet. (Tip: you can line the baking sheet with parchment paper or foil for easy clean-up)
5. Roast in the preheated oven at 400 F for 30 to 40 minutes.
Sausage Filling
While the squash is being roasted in the oven, make the sausage filling.
1. Heat olive oil in a pan, add diced onion, and cook it on medium-high heat for about 2 minutes until slightly browned.
2. Add the crumbled sausage, minced garlic, Italian seasoning and cook while stirring for 5 minutes on medium heat until the sausage is completely cooked through.
3. Add fresh spinach and cook for another 5 minutes on medium heat until the spinach wilts.
4. Add dried cranberries and chopped pecans and mix everything together.
5. Using a spoon, scoop out the flesh from the roasted squash leaving about a 1-inch border along the sides.
6. Stuff the squash with the sausage filling until the mixture is leveled then top with freshly ground black pepper and fresh thyme and enjoy!
