In light of being more intentional about healthy eating, I’m cleaning up my snack game because that is usually where I tend to drop the ball. Today on the snack menu is sesame seed bars, also known as Simsim.
Sesame seed bars are not just a delicious treat, they are nutrient filled as well.
These tiny seeds pack a punch! Sesame seeds are a good source of plant-based protein, healthy fats, antioxidants and fiber. They also provide vitamins and minerals like B vitamins, Vitamin E, Calcium, Iron and Magnesium.
And they are so easy to make! The only hard part about the process is waiting for them to cool so you can dig in.
Ingredients:
2 Cups sesame seeds
1/2 Cup ground flax seeds
2 Tbsp lemon juice
4 Tbsp brown sugar/cane sugar
4 Tbsp honey/maple syrup
Directions:
Grease a large piece of wax paper with oil or butter
Roast the sesame seeds on a pan till light brown
Place in a heat resistant bowl
Stir the honey, sugar and lemon juice into a pan and remove heat when just melted
Add the sesame seeds and flax meal and stir to blend well
Pour onto the large sheet of wax paper, fold over and roll with a rolling pin till flat.
Cool for 5 minutes and cut up with pizza knife in desired shapes (a sharp kitchen knife will do as well)
