My kids have, shall we say “interesting palates”? They try foods that I wouldn’t be caught dead eating. My girls have worked in fine-dining establishments and have been exposed to all kinds of different foods. And, my son loves to travel and eat each country’s local cuisines.
When they come to my house for parties, they invariably bring gourmet dishes with an international flair. And, when my son moved home to pay off his debts for a while, he filled my pantry with purple noodles, stinky sauces and dried “things” I couldn’t begin to identify.
This was true of even his breakfast cereals. Normal Cheerios were deemed too boring. Instead, he brought home the seasonal cereals that come in flavors only a warped mind (or a creative marketing director) could think up. And, boxes of them were left behind when my son moved out.
As I was working on a fall clean-out of my pantry, the bizarre cereal selection was annoying me. Of course I couldn’t just throw food away (no matter how weird it was). So, I grabbed the multiple boxes and made old-fashioned cereal bars. Well, with a twist. Have you ever had banana-nut, multi-grain, pumpkin-spice Cheerios bars? Because, I have.
If you too are stuck with a crazy bunch of cereals, throw them into cereal bars. Because, robed in peanut butter and honey, who wouldn’t eat them?! (Just don’t try it with your son’s purple noodles).
CEREAL BARS
- ½ cup honey
- ½ cup sugar
- ½ cup peanut butter
- 3 cups Cheerios (or other cereal)
- Optional: 1/2 cup each chocolate chips and nuts
Bring the honey and sugar to a boil over medium (not high) heat. Remove from heat and stir in the peanut butter. Combine your cereal and any add-ins in a large bowl and pour the peanut butter mixture over the top. Stir well and pour into a greased square (8×8 or 9×9) cake pan. Let set and cut into squares.
