Are your kids home for summer vacation? Are they driving you crazy with requests for snacks yet? Seriously, how did they survive at school without the countless snacks they demand in the summer?
Well, here’s an easy one you can make in a jiffy and keep on hand in the fridge.
SPICY WATERMELON WITH COCONUT DIP
Ingredients:
- Watermelon
- Tajin Mexican Seasoning
- 1 cup coconut yogurt
- 1/2 lime
- 1 – 2 Tbs powdered sugar
- Optional – toasted coconut
Cut a watermelon into shoestring pieces (I bought a watermelon tray to make it easier). Lightly sprinkle the pieces with Tajin seasoning. You can skip this step if you have younger kids with sensitive palates.
Zest and juice ½ of a small lime.
Combine the zest and 1 Tablespoon of the lime juice with the yogurt (use the rest of the juice for iced tea).
Stir in 1-2 Tablespoons of powdered sugar to taste.
Sprinkle with toasted coconut if desired. (I toasted mine in a dry frypan over medium heat, watching closely so it wouldn’t burn).
Serve with your watermelon “fries”. Store your watermelon fries in the fridge so they stay crisp.
