We all know the cliché – mom awakes on Mother’s Day to a surprise breakfast in bed of barely-palatable eggs and an unbelievable mess in the kitchen.
This year, it doesn’t have to be so. Here are some delicious breakfasts that kids can feel like they’re making solo – with maybe just a little help from dad.
Avocado Toast – This simple dish is totally trendy right now and needs no more kitchen skills than using a toaster. If you want to make it a little more fancy, top it with a fried egg and sprinkle with crumbled bacon.
Overnight Oats – Breakfast prep starts the night before and the presentation is so pretty with NO COOKING REQUIRED! Alternatively, make this breakfast a little more upscale by cooking the oatmeal in the morning and having the kids arrange special toppings for a DIY oatmeal bar for mom.
Breakfast Sandwich – Put the kids in charge of toasting the croissant or English muffin and assembling the final sandwich. Meanwhile, the grown-up can take charge of the stove-top cooking.
Yogurt Parfait – These are so colorful and gorgeous, mom will be floored when she sees them. Layer colorful fruits, crunchy granola, and yogurt in a clear bowl or champagne flute.
Pancakes – Pancakes are super simple, especially if you just use a mix. You probably need to supervise younger kids, but everyone will have fun measuring, pouring, and flipping.
Fruit Skewers – Get pre-cut fruit from the grocery store or have the kids clean it while you chop it. Have the kids put them on bamboo skewers. Boom.
Waffle Bar – Don’t go crazy and try to do Belgian waffles since those are super labor-intensive. Instead use a mix (or even frozen waffles) and set up cute toppings like fruit, whipped cream, or hazelnut spread to take it up a notch.
Breakfast Casserole – This is awesome because while it might take awhile to cook in the morning, ALL the prep work is done the night before and you can do any stove-top browning or chopping of veggies before the kids get involved, so they don’t need to even know it’s been done. All they have to do is assemble the night before, and bake in the morning.
Breakfast Pigs in a Blanket – Pre-cook some breakfast sausage links, then have the kids wrap ‘em in crescent dough, bake ‘em like a regular piggie, and have mama dip ‘em in syrup. Easy peasy.
Quiche – Nothing says “this is a special breakfast” like a quiche. It’s way easier than it sounds in that it’s mostly assembly with little to no stove-top cooking where kids could get burned. Plus, how gorgeous is quiche? Mom will be blown away!
