I love Thai food, but I don’t love that I typically order carb-heavy things like pad tai. This recipe is awesome because it’s all the flavor without all the heaviness. I love bringing this one to work to make my co-workers jealous.
What you’ll need:
- 1/3 cup peanut butter (I use chunky as I think it gives it a more authentic flavor)
- 1 tbsp sweet chili sauce
- 1 tsp-1 tbsp ground ginger (this comes in a powder form which makes it easier!)
- Garlic (start with a tsp- add more to your liking)
- Red pepper flakes to taste
- 1 tbsp lime juice (real lime or bottled)
- 2 tbsp soy sauce
- 1 package Tofu (typically sold in 14 ounce sizes. I prefer firm)
- Stir fry vegetables (anything goes but I prefer carrots, broccoli, bell peppers, zucchini)
- Air Fryer (or oven!)
- Spray Oil
- Water
- Pepper or other seasonings of your liking
What you’ll do:
Thai Peanut Sauce:
Add into blender:
- Ginger
- Peanut Butter
- Sweet Chili Sauce
- Red pepper flakes
- Water (about 1/3 cup)
- Blend until well mixed
Vegetables:
- Warm up garlic and spray olive oil over medium heat
- Add in vegetables
- After several minutes, add in seasoning such as pepper
- Add in a bit of water for a healthy way to get the vegetables simmering without too much oil
Tofu:
- Cut up Tofu into chunks
- Spray air fryer or oven sheet with olive oil
- Let the tofu airfry/bake for about 15 minutes
- I like mine crispy so I go a bit longer
Plate up veggies, tofu and top with peanut sauce. Enjoy!
