Although we celebrate and honor the role that Fathers play in our families everyday, Father’s Day provides the opportunity to go the extra mile and make them feel extra special, recognized, loved and appreciated.
At the beginning of the year, I purchased little planners from the dollar store for the children to use as journals. There is just enough space to jot down the highlights of their day. Their favorite thing is to find out what special holidays the month has. Like hug your cat day, siblings’ day and international pancake day! They were excited to see Father’s Day coming up and wanted to make it extra special for Dad. Let’s make him pancakes!!!! And add lots and lots of sprinkles! I thought it would be a nice touch for the pancakes to spell the word DAD so there is no confusion as to whom the special pancakes with sprinkles belong to!
Let’s make a fun breakfast of delicious and fluffy pancakes for Dad on Father’s Day!
Ingredients:
2 Eggs
2 Cups Self Rising flour
1 tsp baking powder
1 Cup water or milk
4 Tbsp melted butter
Splash vanilla (optional)
Maple Syrup
Fruit (we went with banana and strawberries, Dad’s favorite combo)
Sprinkles!
Squeeze bottle or Ziploc bag.
Directions:
1. Whisk the eggs and water (or milk) in a mixing bowl until incorporated.
2. Add baking powder and mix.
3. Add the flour and stir until blended well.
4. Mix in the melted butter and add vanilla at this point if you would like vanilla flavored pancakes.
5. Fill squeeze bottle with pancake batter. We did not have a squeeze bottle so improvised with a Ziploc. Fill the Ziploc with pancake batter, then snip off one of the corners to make a small opening.
6. Heat a pan or pancake griddle to medium high heat and coat with some butter.
7. Pipe out the letters onto the heated pan using your Ziploc or squeeze bottle. Writing the letters DAD out is fun for older children (with supervision of course).
8. Flip the pancakes when bubbles start to form on the top and the bottom is golden brown. Cook till the other side is golden brown as well.
9. Now the fun part: (for my children at least) once the pancakes are ready, put on a plate and add sprinkles!!!
10. Serve with syrup and Dad’s favorite fruit. Enjoy!
