I had an abundance of garden peas this year, and while searching for recipes, I came across one for pea cupcakes. My granddaughter jumped at the chance to bake them with me so she could fool her mom (my daughter) who HATES peas.
The woman who posted the recipe insisted that the pea taste disappears and leaves behind a luscious green cake. We were so excited to watch my daughter finally get tricked into eating peas.
The perfect opportunity came a few weeks later when a family celebration was on the calendar. My granddaughter came over and we pureed peas and baked cupcakes. They rose beautifully and the kitchen smelled like vanilla. Success! But, when we cut one open and tasted it, it tasted like … PEAS! We were so disappointed.
On the night of the party, my granddaughter went ahead and presented a cupcake to her mom anyway. We explained away the green color by mumbling something about green tea. My daughter was so sweet and said, “Mmm,” when she took a bite, and then we yelled, “They’re pea cupcakes!”
We all had a good laugh, especially when my 4-year-old grandson asked, “Is there really pee-pee in those?”
No one else even wanted a taste, so I was left with a whole slew of weird green cupcakes in my fridge.
The next night on a whim I yelled, “Pea cupcake war!” and threw one at my husband. Life can get boring and I’m all for livening things up. It hit his shoulder and he gave me a look. The poor man is used to pretty much anything after all these years with me.
The next night, I was scrolling on my phone when it was knocked out of my hands by, you guessed it, a pea cupcake. “My turn!” my usually taciturn hubby yelled.
In the days that followed, we randomly threw unfrosted pea cupcakes at each other.
We also put one outside on the bird feeder, but the birds have better taste than to eat pea cupcakes.
And, after all that we still have a bunch left.
My daughter is on vacation though and we’re babysitting her house. Guess what she’ll find inside when she gets home?
You know when you pray for something and it doesn’t turn out the way you wanted it to, but somehow it turns out better in the end? Well, that’s the story of the pea cupcakes. They weren’t the luscious cakes we were promised online, but we’ve had more fun with them than if they had turned out to be delicious!
