One of our favorite things to do in the Summer and Fall is to visit farms and pick fruits fresh off the trees. We also pick some berries to store frozen and enjoy in the winter months as we wait for the next season.
Last fall, we visited a beautiful blueberry farm nestled in the heart of Surrey, British Columbia and had an absolute blast picking our own berries. It was a family-owned farm with a very well-maintained lush rows of blueberry bushes on one side of their large property. The farm is an organic one that does not spray pesticides, so we were free to eat some fruits straight off the bushes. (Just be sure to check for spiders first before popping them into your mouth) Soo delicious! I felt one with nature.
We came home with our treasures that cost just a fraction of what we would have paid at the store and way more fresh as well. The benefits are numerable: very affordable and delicious fruit that is at the peak of freshness, enjoyed with the pride and satisfaction that comes from the knowledge that you harvested it yourself.
Note that you can use both fresh and frozen blueberries for this recipe.
INGREDIENTS:
- 1 cup blueberries
- 1/3 cup maple syrup
- 2 Tbsp coconut oil
- 1/3 cup peanut butter
- 1 cup oats
- 1 cup oat flour
- 1/3 cup water
DIRECTIONS:
1. Grease a loaf tin with coconut oil.
2. Add the blueberries and water to a pan and bring to boil over medium heat.
3. Allow the blueberries to simmer for 5-7 minutes on medium-low heat, stirring occasionally.
4. Slightly mash the berries and set aside.
5. Lightly toast the oats on a frying pan.
6. Transfer the oats, oat flour, peanut butter, coconut oil and maple syrup into a bowl and mix together. The mixture should hold together well. Add more peanut butter if it’s too dry and slowly add more oat flour if it’s too wet.
7. Keep a 1/4 cup of this mixture (for the topping) and pour the remaining mixture into a loaf tin pressing it down together firmly with a spatula or washed hands.
8. Next, pour the blueberry mixture over, spreading evenly.
9. Add the remaining oat mixture on top of the berries, spreading evenly to cover the top.
10. Refrigerate 2 hours until set.
11. Transfer to a chopping board and use a sharp knife to slice into bars.
12. Enjoy!
