There’s a new coffee craze that popped up seemingly out of nowhere. In laymen’s terms, it’s called whipped coffee, but in South Korea (where it first went viral) it’s called “Dalgona” (named for the Korean honeycomb candy called Dalgona). Other countries quickly shared that they have been making this kind of coffee for years. In Pakistan it goes by “Phitti Hui” or beaten coffee. In Greece, it’s “Frappe Coffee”. India and Macao also have their own versions.
Whatever you call it, the recipe for making it is surprisingly simple and very delicious. Seriously, how have we not heard about this sooner?
The basic recipe calls for:
- 2 Tb instant coffee
- 2 Tb granulated sugar
- 2 Tb boiling water
These three ingredients are then whipped and magically morph into a thick, caramel-colored froth of glorious yum.
The methods for achieving the final product vary. In some cultures, you beat the three ingredients together with a spoon in a cup. The sound of the spoon tinkling against the side of the cup is supposed to bring the maker a sense of peace. Other cultures use a hand whisk and make it in a bowl. These methods can take ten minutes or more to achieve the whipped caramel consistency you’re looking for. That’s great for the biceps, but I’ll pass. The easiest (and perhaps most American version) calls for throwing it all in a stand mixer and whipping it on a high speed until it thickens and turns golden. You can also use a hand mixer or the whisk attachment on an immersion blender. It turns so thick and increases in volume – you won’t believe how much whipped coffee comes from such a teeny amount of instant coffee, sugar, and water!
The next step is easy, simply fill a glass with ice and 8 ounces of whatever form of milk you prefer and then spoon the whipped coffee on top. Stir with your straw and sip away! The whipped product itself will taste pretty strong on its own, but once you mix it together with the milk the result is a creamy, indulgent coffee drink with just enough sweetness without being overpowering.
Kristina and I were both intrigued and decided to see what all the fuss was about. Kristina went first and without thinking grabbed her husband’s caffeinated instant coffee. She, like me, is a decaf person. She felt the effects right away. She texted me that she was quite sure her heart was going to explode before the day was over. Also, she was sliding around the house in her socks like a scene from that old Tom Cruise movie while her husband tried to get some work done. Next, she turned all of her work projects over to her kids to do because she couldn’t sit down long enough to concentrate (her kids are 7 and 11). Hey, maybe her bosses didn’t notice! But, she loved the taste so much that she went out and bought decaf the next day.
Next, it was my turn. I’m a mocha girl, so I spooned mine over chocolate milk. Delicious! I love foamy coffees so this was well worth the three minutes it took in my mixer. I used instant decaf espresso packets so my caramel color was darker, but still thick and yummy. This is going to save me a lot of money at the coffee shops, it’s that good. And, I’m going to be experimenting with different flavor combinations.
You might want to buy stock in companies that make instant coffee! This is a craze that will stick around for a long time.
